Butternut Squash Gratin

12x8 Baking Dish
- 2 ½ Pounds Butternut Squash a medium sized squash, peeled and sliced
- ¼ Cup Butter
- 2 Cloves Garlic Sliced
- ¼ Cup Panko Bread Crumbs
- ⅓ Cup Parmesan Cheese Grated
- Parsley optional
Preheat oven to 375.
Place butternut squash slices into a greased baking dish. Season to taste with salt and pepper. Top with sliced garlic.
Melt butter and in a large bowl combine with all other ingredients. Season breadcrumb mix with salt and pepper to taste.
Spread breadcrumb mixture over the squash.
Bake uncovered for 30 minutes or until squash is tender. Topping should be browned, but if needed bake at 425 for 5 minutes or until desired level of doneness.Let cool slightly before serving, then enjoy!
