  • 2 Tbsp Olive Oil
  • 1 Jalapeno Pepper minced
  • 2 Poblano Peppers Chopped
  • 1 Onion Chopped
  • 6 Garlic Cloves Minced
  • 2 14.5 Oz Reduced Sodium White Beans Drained and rinsed
  • 1 Tbsp Ground Cumin
  • 1 Tsp Chili Powder
  • 4 Cups Reduced Sodium Chicken Broth
  • 4 Tbsp Lime Juice
  • 1 Rotisserie Chicken Skin removed, shredded
  • Salt
  • Pepper
  • ½ Cup Cilantro Leaves Chopped


  • In a large dutch oven over medium-high heat, add oil, peppers, onion and garlic. Cook until peppers and onions have softened.
  • Add beans, seasonings, chicken broth lime juice and rotisserie chicken. Bring to a simmer and let cook for 20 minutes
  • Season to taste with salt and pepper. Add fresh cilantro and serve with your favorite toppings. Enjoy!
