White Bean Chicken Chili
Escape the polar vortex with a big bowl of this White Bean Chicken Chili. It's sure to warm you up and is a quick hot meal!
Lodge Dutch Oven
- 2 Tbsp Olive Oil
- 1 Jalapeno Pepper minced
- 2 Poblano Peppers Chopped
- 1 Onion Chopped
- 6 Garlic Cloves Minced
- 2 14.5 Oz Reduced Sodium White Beans Drained and rinsed
- 1 Tbsp Ground Cumin
- 1 Tsp Chili Powder
- 4 Cups Reduced Sodium Chicken Broth
- 4 Tbsp Lime Juice
- 1 Rotisserie Chicken Skin removed, shredded
- ½ Cup Cilantro Leaves Chopped
In a large dutch oven over medium-high heat, add oil, peppers, onion and garlic. Cook until peppers and onions have softened.
Add beans, seasonings, chicken broth lime juice and rotisserie chicken. Bring to a simmer and let cook for 20 minutes
Season to taste with salt and pepper. Add fresh cilantro and serve with your favorite toppings. Enjoy!
