  • 1 Butternut Squash
  • 2 Tbsp Olive Oil
  • Salt
  • Pepper
  • 3 Sprigs Fresh Thyme
  • 1/2 Cup Butter
  • 1/2 Cup Maple Syrup

  1. Preheat oven to 400.

  2. Halve squash and scoop out seeds. Using a vegetable peeler, remove the skin. Cube squash and place in a large bowl.

  3. Season squash generously with salt and pepper. Drizzle olive oil over squash and toss to coat.

  4. Spread squash onto a baking sheet in an even layer. Roast fro 20 minutes or until squash is cooked through.

  5. For the browned butter, heat a skillet on medium heat and melt butter. Cook butter for several minutes without stirring until the bottom begins to turn golden brown. Remove from heat and mix in maple syrup. Drizzle over squash and enjoy!
