  • 1 Onion Diced
  • 2 Garlic Cloves
  • 1/2 Cup Butter
  • 1/2 Cup Flour
  • 4 Cups Heavy Cream
  • 4 Cups Vegetable Stock
  • 2 Potatoes Diced
  • 4 Cups Corn
  • Salt
  • Pepper


  1. Add onion and garlic to a dutch oven and cook in butter on medium-high until softened. Add in flour and stir to coat.

  2. Stir in heavy cream and vegetable stock, making sure to break up any clumps of flour.

  3. Add in potatoes and corn and let simmer for 20 minutes or until potatoes are cooked through.

  4. Season with salt and pepper. If chowder is too thin, thicken with a slurry of cornstarch and water. Serve and enjoy!
