One of my favorite holiday sides are Cheesy Twice Baked Potatoes. These are baked potatoes with a creamy, cheese filling that is just downright delicious. We'd often make these for Christmas or Easter as they are easy to make for a crowd, but you can make this recipe at any time.

What are twice baked potatoes?
Twice baked potatoes are a form of baked potato. The potatoes are baked, cooled, scooped out from the skin, mixed with delicious flavors, then baked again until it reaches a cheesy perfection. This method ensures a crispy potato skin shell and a creamy, cheese center. Serve with a hearty meal for the ultimate comfort food combination!
Can Twice Baked Potatoes be made in advance?
This recipe is great for family dinners or large events because most of the work can be done in advance. The day before your dinner, you can bake the potatoes, create the filling and stuff them. Then cover and refrigerate. When you are ready, bake the potatoes and then they are ready to serve!
Need a bit more time? These potatoes can be kept frozen as well. To freeze, follow the same steps as above. Once the potatoes are filled, place them on a baking sheet so that they are not touching and put in the freezer. Freeze for 4-6 hours. Once frozen, transfer the potatoes to a freezer safe bag (tip: remove as much air as possible from the bag before placing in the freezer to help prevent freezer burn). Potatoes can be kept frozen for up to a month.
To reheat from frozen, preheat the oven to 375. Place the potatoes on a baking sheet and bake for 25 minutes or until warmed through. Serve warm and enjoy!

- 4 Tbsp Butter
- ¾ Cup Bacon Cooked and Crumbled
- ¾ Cup Sour Cream
- ¾ Cup Shredded Cheddar Cheese
- ½ Cup Milk
- 1 Tsp Garlic Powder
- 1 Tsp Salt
- 1 Tsp Pepper

Storage Tips
Fridge: Twice Baked Potatoes can be stored in the fridge for up to 4 days. Place in an airtight container or on a ¼ size baking sheet wrapped in plastic wrap. Reheat by either microwaving or baking in an oven at 350 degrees or until warmed through.
Freezer: To freeze twice baked potatoes, place on a ¼ size baking sheet after stuffing. Place tray in the freezer for 6 hours or until potatoes have frozen. Place frozen potatoes in a freezer proof ziploc bag. Store in the freezer for up to 3 months. Discard if there is any freezer burn or frost build up.
To heat from frozen, place potatoes on a baking sheet and bake in an oven at 375 degrees for 25 minutes or until baked through and golden.

- 4 Russet Potatoes
- 4 Tbsp Butter
- ¾ Cup Bacon Cooked and Crumbled
- ¾ Cup Sour Cream
- ¾ Cup Shredded Cheddar Cheese
- ½ Cup Milk
- 1 Tsp Garlic Powder
- 1 Tsp Salt
- 1 Tsp Pepper
Instructions
- Preheat oven to 400. Place potatoes on a baking sheet and poke with a fork several times. Cook for 45 minutes or until baked through. Remove from oven and let cool completely.
- Slice potatoes in half. Scoop out the interior and leave a wall of potato around the skin. Place scooped out potato in a large mixing bowl.
- In the mixing bowl, add butter and mash until smooth and fluffy. Stir in bacon, sour cream, cheddar cheese, milk, salt, garlic powder and pepper.
- Spoon into the potato skins and top with additional cheese if desired. Bake at 350 for 20 minutes or until cheese has melted. Enjoy!
