Sundried Tomato Gnocchi

Gnocchi are a versatile type of pasta that can be served several ways with a seemingly unlimited amount of pairings. This recipe features a creamy sauce, sun dried tomatoes and plenty of fresh basil. This pasta dish is a quick and easy dinner that won't disappoint. I'm sure this recipe for Sundried Tomato Gnocchi is the perfect cold weather comfort food for you.

What is Gnocchi

Gnocchi are a form of pasta, usually made from a potato base. They are known for being pillowy soft, light and fluffy. If you are intimidated by making fresh pasta, gnocchi is a good place to start because this pasta is fairly easy to make and rather foolproof. As a plus, the ingredients to make gnocchi are rather common, so your wallet won't be hurting either. Once formed gnocchi are boiled in water for several minutes until cooked through, from there they can be friend in a pan with butter, served in a sauce or be made into a soup such as my Chicken Gnocchi Soup. As with most pasta, you can buy dried gnocchi at the grocery store.

What to eat with Gnocchi

Gnocchi is often best as the star of the dish. I prefer to each my gnocchi with a bit of sage and brown butter as a simple, yet delicious meal. Classic combos include gnocchi in a red sauce, gnocchi in a cream sauce or gnocchi in soup. Gnocchi can be served with any usual pasta side dish. My favorite to serve with gnocchi is bread so that I can sop up all the extra sauce. Or you could go the Olive Garden route and serve with a nice cold salad, which is always a classic pairing.

How to make Gnocchi

The first step in making gnocchi is cooking your potatoes. Boil, peel and grate the potatoes then let cool. Once cooled you'll add ricotta, flour, salt and egg and stir to combine. Once combined, begin to knead by hand. You'll start to feel the pasta coming together and feeling some elasticity. Form into a loaf and slice lengthwise. Roll each slice then cut into bite sized pieces. Place gnocchi in a pot of boiling water and boil just until they float to the top. Serve in your favorite sauce and enjoy. Ingredients
 
 

  • 2 Tbsp Olive Oil
  • 1 Tbsp Garlic Minced
  • ¼ Cup Oil Packed Sun Dried Tomato Sliced
  • ½ Cup White Wine Dry
  • 1 Cup Heavy Cream
  • ½ Cup Parmesan Cheese
  • Salt
  • Pepper
  • ½ Cup Fresh Basil Sliced
  • 1 Pound Gnocchi

Instructions
 

  • In a large pan on medium-high heat, combine oil and garlic and cook for 2 minutes. Add tomatoes and wine and cook for 5 minutes or until alcohol has been cooked off.
  • Stir in the cream and bring to a simmer. Add the parmesan cheese and stir until melted. Cook until sauce has thickened slightly and season to taste with salt and pepper.
  • Add gnocchi and toss to coat. Sprinkle with basil and serve warm. Enjoy!
