When the weather outside is frightful, I want my favorite comfort foods. When I was a kid, one of the most common foods we had to warm us up was tomato soup. It's still one of my favorites to this day and I was excited to put a bit of a spin on it with this recipe for Roasted Red Pepper and Tomato Soup.
The roasted red peppers give a sweetness to the soup and add a punch of flavor. This recipe will soon become one of your favorites too!

What to make Roasted Red Pepper and Tomato Soup in
I love making soups in my dutch oven. It holds a large volume of soup and its thick walls limit hot spots and scorching on the bottom to give an even heat throughout. If you don't have a dutch oven, choose a large pot that is made out of a thicker material for even heating.
If you are looking to invest in a dutch oven (which I fully support you doing!) my favorite brands are Le Creuset, Lodge and Staub. Don't be scared by the big price tag, a good dutch oven will last more than a lifetime.

My personal favorite is grilled cheese with tomato soup. There's something about the gooey cheese being dipped into the tomato soup that is just too good. For this recipe I toasted some buttered baguette slices in a cast iron.
What are Roasted Red Peppers
Roasted red peppers are a form of red bell pepper. The peppers are charred, peeled and then stored in olive oil. They are commonly served on sandwiches, with hummus, or made into sauces. This article from Love and Lemons has great information and a recipe to make roasted red peppers.
This recipe for Roasted Red Pepper and Tomato Soup was inspired by a Trader Joe's version of this soup. It has become a favorite of mine over the years so much so that I had to make my own rendition.
Ingredients Needed
- 2 Tbsp Olive Oil
- 3 Cloves Garlic, Minced
- 1 Onion, Chopped
- 1 Carrot, Diced
- 2 Tbsp Tomato Paste
- 14.5 Oz Crushed Tomatoes
- 12 Oz Roasted Red Peppers
- 3 Cups Vegetable Broth
- 1 Tbsp Sugar
- Salt
- Pepper
- 1 Tsp Oregano
- 1 Cup Heavy Cream
- ½ Cup Fresh Basil
Equipment Needed
- Dutch Oven or similar
- Wooden Spoon
- Immersion Blender or regular Blender
Storage Tips
Fridge: Place in an airtight container and store in the fridge for up to 4 days. To reheat either warm in the microwave or on the stovetop until heated through.
Freezer: Store in the freezer for up to 4 months. Place in an airtight container to store. To reheat, either defrost in the microwave or on the stovetop and warm until heated through.
Roasted Red Pepper and Tomato Soup

Ingredients
- 2 Tbsp Olive Oil
- 3 Cloves Garlic Minced
- 1 Onion Chopped
- 1 Carrot Diced
- 2 Tbsp Tomato Paste
- 14.5 Oz Crushed Tomatoes
- 12 Oz Roasted Red Peppers Chopped
- 3 Cups Vegetable Broth
- 1 Tbsp Sugar
- Salt
- Pepper
- 1 Tsp Oregano
- 1 Cup Heavy Cream
- ½ Cup Fresh Basil Chopped
Instructions
- In a large dutch oven add oil, garlic, onions and carrots. Cook until softened, about 5 minutes. Stir in tomato paste and cook for 1-2 minutes.
- Add crushed tomatoes, roasted red peppers and vegetable broth. Bring to a simmer. Season to taste with salt and pepper, then add oregano. Simmer for 20 minutes.
- Using an immersion blender, puree the soup until smooth. Double check the seasonings and adjust as needed. Stir in heavy cream and garnish with fresh basil before serving. Enjoy!
