When I want a comfort food dinner, I go to gnocchi. It's my favorite form of pasta and what I usually go for when I want some self indulgence. This recipe for Roasted Mushroom Gnocchi combines a creamy sauce with umami filled roasted mushrooms for an amazing combination. This is a dinner worth having on a special occasion.

What is Gnocchi?

Gnocchi is a type of Italian pasta that is known for being a soft dough dumpling. These are typically made out of potatoes and flour but some varieties will include ricotta, cheese or cornmeal. The texture of gnocchi is pillowy soft dough with ridges on the exterior so that sauce clings to the pasta. Gnocchi can be served with a variety of sauces including cream, tomato and pesto based sauces.

How to roast mushrooms for Roasted Mushroom Gnocchi

Roasting mushrooms brings out the umami flavor and changes the texture. By removing the water the mushrooms take on a meatier texture. Break apart the mushrooms by hand and spread on a basking sheet. Drizzle with olive oil and season with salt and pepper. Roast at 400 degrees for 25 minutes or until edges are crisp.

What type of mushrooms to use

This recipe for Umami Roasted Mushroom Gnocchi calls for a medley of mushrooms. By using a medley of mushrooms, you'll create a more robust umami flavor. I tend to use a wild mushroom mix as they tend to be more flavorful than common varieties like button mushrooms. Options like chanterelle, oyster, shiitakes, etc can be found at stores such as Whole Foods.

How to clean mushrooms

Cleaning mushrooms must be done before cooking to remove any dirt and debris. Because mushrooms grow close to the ground, they can pick up a lot of dirt. The tick is that you do not want to add water to the mushrooms as they are porous and will absorb a lot of water. Instead use a damp paper towel and gently clean the tops and stems of the mushrooms to remove any dirt. Let dry before cooking the mushrooms.

Is gnocchi a pasta or a potato?

Ok this is the ongoing debate about gnocchi. Gnocchi is considered a pasta, but in some circles is also considered a potato dumpling. The definitions overlap a bit, but gnocchi can also be made without any potato which solidifies it as a pasta in my book. Ingredients Needed

  • 1 Cup Oyster Mushrooms
  • 1 Cup Maitake Mushrooms
  • 2 Tbsp Olive Oil
  • Salt
  • Pepper
  • 10 Oz Gnocchi fresh or store bought
  • 2 Shallots Minced
  • 1 Clove Garlic Minced
  • 1 Cup Chicken stock
  • 1 ½ Cups Cream
  • ½ Cup Parmesan Cheese Grated
  • 2 Tbsp Flour
  • 2 Tsp Ground Thyme
  • Parsley optional

  • Baking Sheet
  • Skillet
  • Saucepan
  • Wooden Spoon

Storage

Mushrooms: Store mushrooms in original packaging or in a paper bag in the fridge for up to one week. Fresh mushrooms are not able to be kept frozen.

Leftovers: Any leftovers can be store in an airtight container in the fridge for up to 4 days. It can be reheated by warming in a microwave.

Ingredients
 
 

  • 1 Cup Oyster Mushrooms
  • 1 Cup Maitake Mushrooms
  • 2 Tbsp Olive Oil
  • Salt
  • Pepper
  • 10 Oz Gnocchi fresh or store bought
  • 2 Shallots Minced
  • 1 Clove Garlic Minced
  • 1 Cup Chicken stock
  • 1 ½ Cups Cream
  • ½ Cup Parmesan Cheese Grated
  • 2 Tbsp Flour
  • 2 Tsp Ground Thyme
  • Parsley optional

Instructions
 

  • Preheat the oven to 400.
  • Beak mushrooms into small clumps and place onto a baking sheet. Season with salt and pepper and drizzle with olive oil. Roast for 25 minutes.
  • In a large pan, cook shallots and garlic until softened. Add chicken stock, cream, parmesan cheese, thyme and flour. Bring to a simmer and cook until liquid has reduced and thickened.
  • In a separate pot, bring water to a boil and cook gnocchi as desired.
  • Add gnocchi to the sauce and stir to combine. Mix in mushrooms and season with salt and pepper to taste. Enjoy!
