Asparagus is a favorite springtime vegetable and makes for a perfect appetizer with this recipe for Herbed Ricotta & Asparagus Tart. Creamy herbed ricotta is the base for this puff pastry tart. It's easy to make and ready in 30 minutes.

Tips for using Puff Pastry
- Puff Pastry is so simple to use and it becomes flaky and delicious when baked. Here are some tips to make it amazing!
- Thaw on the counter or in the fridge until the dough is pliable. Once thawed you can easily roll it out, cut it and make whatever you like!
- To quick thaw in the microwave, remove 1 pastry sheet from the box and outer wrapping and wrap in a paper towel. Microwave on HIGH for 15 seconds. Turn the pastry sheet over. Microwave for another 15 seconds. If pastry doesn’t unfold easily, microwave for another 5 seconds on each side.
- Brush dough with an egg wash to get a beautiful golden color when baked
- Brush dough with egg wash and then top with your favorite seasonings. Sea salt, sparkling sugar, sesame seeds, cinnamon sugar, are all great on top
- Don’t overheat the dough before baking. This will melt the butter and result in a soggy mess instead of flaky layers
- Use for both savory and sweet dishes!
How to cook Herbed Ricotta and Asparagus Tart
- Thaw frozen puff pastry sheets and place on a parchment lined baking sheet
- Crease puff pastry with a butter knife ½ inch from the border
- Brush edges with egg wash
- Spread herbed ricotta and asparagus on puff pastry
- Bake for 20 minutes at 425 degrees or until edges are browned and crisp
What type of puff pastry to use
For this recipe I used puff pastry sheets which are found in the frozen foods sections at most chain grocery stores. Any brand of puff pastry can be used, however alternatives such as puff pastry cups and phyllo dough should be avoided. Puff pastry should be kept frozen until needed. - 1 ½ Cups Ricotta Cheese
- 2 Eggs
- ¼ Cup Parsley Chopped
- 1 Tbsp Thyme Chopped
- 1 Tbsp Chopped
- Salt
- Pepper
- ½ Pound Asparagus Trimmed

Storage Tips
Fridge: Store Herbed Ricotta & Asparagus Tart covered in the fridge for up to 4 days. To reheat, warm in the oven to crisp the puff pastry and warm the filling.
Puff Pastry: Store pre made puff pastry in the freezer until use. To defrost for use, leave on the counter at room temperature for 30 minutes or until pliable.
Asparagus: Store asparagus as you would cut flowers. trim the ends and place in a jar filled with ½ inch of water. Place in the fridge and use within 1-2 days. If asparagus is soft, yellowed or shriveled, discard and do not use.
Herbed Ricotta & Asparagus Tart

- Puff Pastry Sheet Thawed
- 1 ½ Cups Ricotta Cheese
- 2 Eggs
- ¼ Cup Parsley Chopped
- 1 Tbsp Thyme Chopped
- 1 Tbsp Chopped
- Salt
- Pepper
- ½ Pound Asparagus Trimmed
Instructions
- Preheat oven to 400. Roll out on parchment paper. Score a box shape around the edge of the pastry.
- Combine ricotta, 1 egg, parsley, thyme and rosemary. Season generously with salt and pepper. Spread onto the puff pastry within the center and not going over the scored edges.
- Lay asparagus on top of the ricotta. Season with salt and pepper.
- Brush pastry with an egg wash.
- Place in the oven for 20-25 minutes or until pastry has puffed up significantly and has turned golden.
- Remove and let cool slightly before slicing. Enjoy!
