Living in a small apartment I often struggle to find good steak recipes as I'm limited to cooking the meat either on the stovetop or in the oven. I would love to have enough space to get a grill or a smoker, but until then I look for creative ways to make the same ingredients seem like new.
An easy way to mix up my method is to broil the flank steak and with this recipe I went one step further and made a Broiled Flank Steak with Chimichurri sauce.
Steak is broiled to perfection with a crisp seasoned exterior and juicy center, then topped with a fresh blend of parsley, cilantro, and jalapeño in a chimichurri sauce.

What is Chimichurri Sauce
Chimichurri is a south american sauce that is served uncooked, usually over steak. It's made of parsley, cilantro, garlic, chile pepper and vegetable oil chopped and then blended together. When marinating flank steak, I usually let it come to room temperature and season generously with oil, seasonings, salt, pepper and let sit for 30 minutes in that mixture. The chimichurri sauce will provide the rest of the flavor, but being in the marinade will help tenderize the steak.
Chimichurri sauce can be left roughly chopped or pureed in a blender for a smoother sauce.
How to cook flank steak
I decided to broil my flank steak so that it could be cooked both quickly and render the fat until crispy. There's not a lot a lot of fat to the steak which means it can overcook easily.
I cooked mine under the broiler for about 4 minutes per a side and it came out medium-rare and browned on all sides. I served it with onions, peppers and rice, all topped with the chimichurri sauce. I really enjoy using the broiler and have used it in the past for my Oven Baked Garlic Rosemary London Broil recipe as well.
I do have a confession to make. Although I've taught myself to be a better cook in so many different areas, there's one thing I can never cook right: rice. Yes, one of the simplest things and I manage to mess it up every single time. You can if you know rice well, but this one was really undercooked (but we ate it anyways). I should probably invest in a rice cooker, maybe I'll be lucky and get one for Christmas.

- 1 ½ Pounds Flank Steak
- ¼ Cup Vegetable Oil
- 1 Tsp Chili Powder
- 1 Tsp Garlic Powder
- Salt
- Pepper
- Lemon Juice
- ½ Cup Cilantro Minced
- ½ Cup Parsley Minced
- 1 Shallot Minced
- 1 Jalapeno Minced
- 4 Cloves Garlic Minced
- 2 Tbsp Oregano
- ¼ Cup Red Wine Vinegar
- Salt
- ¾ Cup Vegetable Oil

Storage Tips
Fridge: Store Broiled Flank Steak with Chimichurri in a sealed container in the fridge for up to 4 days. Store sauce and steak separately for the best results. To reheat, warm steak in the microwave or on the stovetop until heated through the top with sauce.
Flank Steak with Chimichurri

- 1 ½ Pounds Flank Steak
- ¼ Cup Vegetable Oil
- 1 Tsp Chili Powder
- 1 Tsp Garlic Powder
- Salt
- Pepper
- Lemon Juice
Chimichurri Sauce
- ½ Cup Cilantro Minced
- ½ Cup Parsley Minced
- 1 Shallot Minced
- 1 Jalapeno Minced
- 4 Cloves Garlic Minced
- 2 Tbsp Oregano
- ¼ Cup Red Wine Vinegar
- Salt
- ¾ Cup Vegetable Oil
Instructions
- Begin by seasoning flank steak with salt, pepper, chili powder and garlic powder. Place in a bowl and coat in oil and a splash of lemon juice. Let sit and come to room temperature for 30 minutes or let marinate in the frisge for up to 24 hours.
- Turn the broiler on high. Put steak on a baking sheet, place on the top rack closest to the broiler and cook for about 4 minutes per a side or until desired doneness. Let steak rest while creating sauce.
Chimichurri Sauce
- In a large bowl combine all ingredients. Sauce can be served as is or blended until smoother. Spread over cooked meat and enjoy!
