When I want chicken for dinner, I don't want the same old recipes over and over again. It doesn't have to be anything too crazy, but fresh and delicious. That's the thought process I had behind this recipe for Chicken and Roasted Cherry Tomatoes.
Perfectly cooked chicken with cherry tomatoes that have been roasted to perfection, with lots of garlic and fresh basil. It's a perfect weeknight meal!

How to cook Chicken
The chicken for Chicken and Roasted Cherry Tomatoes can be cooked a few different ways. To start for all methods, season your chicken with salt and pepper.
Baking: Preheat oven to 375 degrees. Place chicken on. a baking sheet and drizzle with a bit of olive oil. Bake for 20 minutes or until internal temp is 165 degrees. Let rest for 5 minutes, then plate and top with garnishes. The pro of this method is that it is hands off and gives you time to prep anything else that you are cooking.
Stovetop: Place chicken in a large nonstick pan with a bit of olive oil. Cook on a medium heat for 5-7 minutes per a side depending on the thickness of the breasts. Cook until chicken reaches an internal temp of 165 degrees. This method is a bit faster than the oven method, but the chicken may stick is you don't use a nonstick pan or enough oil. This is the method I used when making this recipe.
What type of tomatoes to use
For this recipe I used Cherry tomatoes. When roasted, cherry tomatoes take on a sweeter taste that is absolutely delicious. You can also use grape tomatoes or any other small tomato variety. Regardless of variety, the prep remains the same. You'll want to remove the stem from the tomato and discard any tomatoes with large bruises.
What to serve with Chicken and Roasted Cherry Tomatoes
There are many different options for sides to make this a meal. These are some of my favorites:

- Roasted Broccoli
- Garlic Bread
- Riced Cauliflower

Storage Tips
Fridge: Store Chicken and Roasted Cherry Tomatoes in a sealed container for up to 4 days in the fridge. To reheat either warm in the microwave or on the stovetop until heated through.
Raw Tomatoes: Store raw tomatoes at room temperature until use. If they come on the vine, leave on the vine until use as well. Raw tomatoes stored at colder temperatures can develop a mealy texture.
Fresh Basil: Store basil at room temperature for the best results. Basil stored in the fridge can darken and turn bad. To store on the countertop, trim the end of of the basil and place in a glass jar like you would for cut flowers. Place a plastic bag over the greens and basil will keep for several days.
Chicken and Roasted Cherry Tomatoes

Ingredients
- 2 Pounds Chicken Breasts
- Salt
- Pepper
- 3 Tbsp Olive Oil
- 2 Cups Cherry Tomatoes Sliced
- 6 Cloves Garlic Smashed
- ½ Cup Basil Chopped
Instructions
- Season chicken generously with salt and pepper. Cook in large skillet with olive oil on medium heat for 4-5 minutes per side or until internal temperature reaches 165 degrees.
- Preheat oven to 375. Slice grape tomatoes. Spread on a baking sheet with garlic and season with salt and pepper, then drizzle with olive oil. Bake for 20 minutes.
- When tomatoes are done, add to pan with chicken and toss to coat. Serve end enjoy!
