I'm a known Trader Joe's finatic. I especially love their seasonal items, such as the Butternut Squash Gratin. But because these items are only in stores for a few weeks, if there's a meal I love I like to reinvent it in my own recipe. That's how this recipe for butternut Squash Gratin came to be.
Rings of butternut squash are baked topped with a parmesan panko seasoned bread crumb. This recipe is a favorite of mine for a reason!

What is a Gratin?
The definition of a gratin is very broad. Gratin is a culinary technique for any dish that is topped with a browned crust. This can range from breadcrumbs, to cheese or even butter. Gratins are typically baked in a shallow dish and are usually a vegetable side dish. Some gratins have a creamy sauce underneath the breading and other, like this recipe, simply have the vegetable.
Almost any vegetable can be made into a gratin. Some of my favorites are potatoes au gratin, onions au gratin and greens au gratin.
What is a butternut Squash
Butternut Squash is a common form of winter squash. It is known for its pale orange exterior and bright orange interior. It tastes similar to pumpkin but with a distinct nutty flavor. This squash is common and can be found at most grocery stores year round, however it is in season during the fall months.
Can't find butternut squash? Other winter squash varieties such as acorn, delicata, or kabocha can be used as substitutes. Many store will also have pre cut butternut squash available. For ease of use, feel free to use cubed or ribbon cut butternut squash.
How to prep butternut squash gratin
To begin, slice the butternut squash in half width wise (or in elementary school terms hamburger) right above the bulb. Slice off the stem and bottom of bulb end. Scoop out the seeds. Using a vegetable peeler, remove the skin. Then slice the squash into ½ inch rings. Place in a large baking dish and season with salt and pepper generously

- ¼ Cup Butter
- 2 Cloves Garlic Sliced
- ¼ Cup Panko Bread Crumbs
- ⅓ Cup Parmesan Cheese Grated
- Parsley optional

Storage
Butternut Squash Storage: Uncut butternut squash can be kept out at room temperature for up to 2 months in a cool, dry place. Discard the squash if it begins to become discolored, soft or has grey or slimy seeds. Once cut, butternut squash should be stored in a refrigerator and used within a few days.
Leftovers Storage: Cover leftovers with aluminum foil or place into an airtight container. Store in the fridge for up to 4 days. Squash can be reheated by using a microwave oven. I do not suggest storing leftovers in the freezer for this recipe as the panko breading did not fare well when I tested it.

Butternut Squash Gratin

Ingredients
- 2 ½ Pounds Butternut Squash a medium sized squash, peeled and sliced
- Salt
- Pepper
- ¼ Cup Butter
- 2 Cloves Garlic Sliced
- ¼ Cup Panko Bread Crumbs
- ⅓ Cup Parmesan Cheese Grated
- Parsley optional
Instructions
- Preheat oven to 375.
- Place butternut squash slices into a greased baking dish. Season to taste with salt and pepper. Top with sliced garlic.
- Melt butter and in a large bowl combine with all other ingredients. Season breadcrumb mix with salt and pepper to taste.
- Spread breadcrumb mixture over the squash.
- Bake uncovered for 30 minutes or until squash is tender. Topping should be browned, but if needed bake at 425 for 5 minutes or until desired level of doneness.Let cool slightly before serving, then enjoy!
