It's no secret that I really like bruschetta. It's even going to be one of our passed appetizers at my upcoming wedding. And while I was thinking about how to use some leftover tomatoes, I thought a Bruschetta Baked Chicken would be the perfect opportunity to turn this classic appetizer into a meal.
How to cook chicken breast
The chicken for Bruschetta Baked Chicken can be cooked a few different ways. To start for all methods, season your chicken with salt and pepper.
Baking: Preheat oven to 375 degrees. Place chicken on. a baking sheet and drizzle with a bit of olive oil. Bake for 20 minutes or until internal temp is 165 degrees. Let rest for 5 minutes, then plate and top with garnishes. The pro of this method is that it is hands off and gives you time to prep the topping while the chicken cooks.
Stovetop: Place chicken in a large nonstick pan with a bit of olive oil. Cook on a medium heat for 5-7 minutes per a side depending on the thickness of the breasts. Cook until chicken reaches an internal temp of 165 degrees. Let rest for 5 minutes, the top with garnishes. This method is a bit faster than the oven method, but the chicken may stick is you don't use a nonstick pan or enough oil.
What is Bruschetta
Bruschetta is traditionally an antipasto from Italy. It is a type of appetizer and consists of chopped tomatoes, chopped basil, parmesan cheese and balsamic vinegar. Classic bruschetta is usually served on a piece of toasted bread. this recipe replaces the bread with chicken for a twist on the classic appetizer.
What type of Tomatoes to use
There is not "correct" tomato to use but my preference is to use fresh tomatoes for the best flavor. I also gravitate towards using roma tomatoes as the have less seeds and liquid than some of the larger varieties. If using a large tomato variety, remove the seeds and drain any excess liquid by letting tomatoes rest in a colander before using.

- 1 Pound Chicken Breast
- Salt
- Pepper
- 3 Tbsp Olive Oil
- 2 Cups Tomatoes Diced
- ¾ Cup Basil Chopped
- 1 Cup Parmesan Cheese Sliced
- ½ Cup Balsamic Vinegar
Instructions
- Preheat oven to 375 degrees. Season chicken generously with salt and pepper. Place chicken in an oven proof baking dish and drizzle with olive oil. Bake for 20 minutes or until internal temperature reads 165 degrees. Remove from oven and let rest for 5 minutes.
- Combine tomatoes, basil and Parmesan cheese. Top chicken with tomato mixture. Drizzle balsamic vinegar over chicken. Serve and enjoy!
