In the coldest days of winter, all I crave is food that is comforting and warm. Being from New England, our winters are long and cold, so finding good recipes to cook is a priority. This recipe for Beef Stroganoff is a great one to have in your dinner rotation.
Strips of beef are cooked in a creamy sauce with sautéed mushrooms and onions and served over egg noodles. This is a large recipe that's perfect for a family dinner with some leftovers. But with this recipe those leftovers won't last long!

What is Beef Stroganoff
Beef Stroganoff is a Russian dish that consists of thin slices of beef served in a sauce. There are many different variations of this dish but in the United States it is commonly served with sautéed mushrooms and onions in the sauce as well. Beef Stroganoff can be kept refrigerated for 3-4 days.
What is Stroganoff sauce made out of?
The sauce for Beef Stroganoff is a roux based sauce. After the mushrooms and onions are sautéed, add equal parts butter and flour. Cook for 3-4 minutes or until flour is no longer raw. Next add the beef broth and stir to completely incorporate. Bring to a simmer and the sauce should begin to thicken. The sauce will be ready when it is able to coat the back of a spoon.
What to serve with Beef Stroganoff
While egg noodles are a common accompaniment to Beef Stroganoff, there are other options as well
- Egg Noodles
- Rice
- Cauliflower Rice
- Mashed Potatoes
- Pappardelle
- Steamed Broccoli
Regardless of the side, the sides are usually cooked separately and then plated with the beef just before serving. Some sides like egg noodles may become overcooked if mixed in with the beef. If you have leftovers, keep the egg noodles and the beef separate for optimum texture when reheated.

- 1 ½ Pounds Beef Tenderloin Sliced into ½ inch strips
- Salt
- Pepper
- 8 Oz White Mushrooms Sliced
- 1 Onion Sliced
- 2 Cloves Garlic Minced
- ½ Cup Butter
- ½ Cup Flour
- 1 ½ Cups Beef Broth
- 1 Tsp Worcestershire Sauce
- 1 ½ Cups Sour Cream
- 1 Pound Egg Noodles Cooked

- Dutch Oven or similar
- Wooden Spoon
- Saucepan
Storage Tips
Fridge: Store beef stroganoff and noodles separately in sealed containers for up to 4 days. To reheat, warm in the microwave and serve together.
Freezer: Store noodles and beef combined in an airtight container for up to 2 months. To reheat, defrost in the microwave and heat until warmed through.

- 1 ½ Pounds Beef Tenderloin Sliced into ½ inch strips
- Salt
- Pepper
- 8 Oz White Mushrooms Sliced
- 1 Onion Sliced
- 2 Cloves Garlic Minced
- ½ Cup Butter
- ½ Cup Flour
- 1 ½ Cups Beef Broth
- 1 Tsp Worcestershire Sauce
- 1 ½ Cups Sour Cream
- 1 Pound Egg Noodles Cooked
Instructions
- Slice beef into ½ inch strips and season to taste with salt and pepper.
- Heat the dutch oven on medium-high heat. Combine mushrooms, onions, garlic and butter. Cook until onions have softened and then remove mix from pan and set aside.
- Add beef to pan and cook until browned on all sides. Add flour to pan and cook for 2-3 minutes until no longer raw. Add 1 cup of broth and bring to a boil. Cover pot and reduce to a simmer and cook for 20 minutes.
- Mix in onion medley, Worcestershire sauce and sour cream. Season to taste with salt and pepper. Cook uncovered for several minutes or until mixture thickens. Serve warm over egg noodles and enjoy!
